Are you with me when it comes to dinner recipes? In my opinion, they need to be quick and easy. After a long working day, my legs are heavy, and my blood sugar is low, I feel tired and want to eat AsSoonAsPossible. I don’t want to be guided through lengthy recipes with tons of ingredients. It needs to be simple and fast, but healthy too. During the week I watch my calories and want to be sure, that my body gets what he needs. You know that I’m having a sweet tooth (last weekend I had these Snickers Rolls for example…), but I try to balance my baking obsession with healthy meals.

Although there are few ingredients used in this recipe, it has a strong flavor of tomatoes, mushrooms, and cheese. Because of the crushed tomatoes and mushrooms in this Ricotta Mushroom Pasta, it is a nutritious bomb.

- 12 oz pasta
- 1.5 lb crushed tomatoes or passata
- 1 cup ricotta
- 1.3 lb mushrooms sliced
- season with salt & pepper to taste
Cook pasta according to the instructions.
Slice mushrooms and saute over medium-high heat for about 5 minutes. Add ricotta and crushed tomatoes or passata and cook for about 5-10 minutes to thicken. If you don't get any passata but want to have a smooth consistency without any tomato chunks in your pasta, grind crushed tomatoes in the food processor to get a smoother consistency before adding to the other ingredients.
Strain pasta and add to ricotta cream. Add parmesan and stir just until combined. Season with salt and pepper to taste, sprinkle with some additional parmesan and enjoy immediately.
