A great way to start the morning is with these Blueberry Cream Cheese Overnight Oats. 6 ingredients - lots of blueberries & real vanilla!
- 1 cup blueberries
- 1/4 cup cream cheese
- 1 tbsp maple syrup
- 1 vanilla bean
- 1/2 cup oats
- 1/4 cup milk
Blend blueberries and stir together with cream cheese, maple syrup, and vanilla* until combined and creamy. Put with milk and oats into a jar, stir to combine and store in the refrigerator overnight. Top with additional blueberries if you want to and enjoy the next day.
*First, cut off the straight end of the vanilla bean. Then place the tip of your sharp knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Then just use the seeds.
