I can’t believe that we already have August. What the heck? Where is July? No seriously. Next month my 3rd semester starts, and I start getting excited about upcoming Halloween, Thanksgiving, and X-Mas. And the most important, my winter vacation. Maybe I fly to San Francisco again. I can’t stop thinking about this city…
But not so fast. Let’s stay in summer with our heads. This week it is extremely hot here in Austria. We hit the 100°F mark. It is crazy. Do you have such high temperatures where you live? If so, how do you survive it?
I cool myself down with cold food and drinks whenever it is possible. I start the day with having this Papaya Frozen Yogurt for breakfast. Super refreshing and super creamy. I love to have frozen yogurt for breakfast. This literally makes my day.
Just 4 ingredients and no ice cream machine needed
You may think that it is too time-consuming or complicated to get yourself this delicious Papaya Frozen Yogurt for breakfast. Do you need to stand up earlier? Do you need an ice cream machine? Do you need any advanced chef skills? Nope, nope, and no no.
All you need to do is to cut the papaya into a few chunks and freeze it overnight. The next morning, place it in a food processor or blender and puree until smooth. Then stir together with Greek yogurt, agave syrup, and lemon juice.
The lemon juice lets the flavor of the papaya pop in your mouth. Don’t leave it out.
This Papaya Frozen Yogurt is a great way to start the day. It is healthy and super delicious. I eat mine with additional papaya chunks, Greek yogurt, agave syrup, and Supper Nutty Granola on top. It is always great to have different textures in a breakfast bowl. The super creamy frozen yogurt, the fresh and soft papaya chunks, and the crunchy granola are a perfect combination.
I don’t see any reasons to wait with going to the store to shop for tomorrows breakfast, do you?

- 14 oz papaya (400g)
- 7 oz Greek yogurt (200g)
- 1 tbsp lemon juice
- 1 tbsp agave syrup
Peel papaya and remove black seeds. Cut papaya into a few chunks and freeze in a zip lock bag overnight.
The next morning, place frozen papaya chunks into a blender or food processor and puree until smooth. Put papaya puree into a bowl and stir together with Greek yogurt, freshly squeezed lemon juice, and agave syrup. Top with granola, additional papaya chunks, agave syrup, and Greek yogurt. Store leftovers in the freezer for up to 1 day.
