Strawberry Rhubarb Overnight Oats – let’s start the day with something sweet
Ok, I think you already now that I’m obsessed with Overnight Oats because this is my 5th Overnight Oats recipe on my blog. When you want to have them vegan, replace the milk products with rice milk, or coconut cream, or something else you love.
These Strawberry Rhubarb Overnight Oats are my new fav right now! Bummer that we don’t have strawberry & rhubarb season all year long! These two are truly meant for each other. The sweetness of the strawberries complements the sourness of the rhubarb perfectly.
Vanilla Cream Cheese ⇒ the Sprinkles on top of these Strawberry Rhubarb Overnight Oats
I love cream cheese in overnight oats and also in or on baking goods like Cinnamon Buns… The subtle saltiness of the cheese is the perfect antagonist to the sweetness of the added sugar. But I wanted to have a sugar-free version for these Strawberry Rhubarb Overnight Oats, so this was the reason why I experimented with sugar-free Vanilla Cream Cheese Frosting without any butter. Lucky me! The first shot was a success! I combined cream cheese with maple syrup and a vanilla bean. The consistency and also the taste was close to the real thing. Maybe a bit better to be honest. I definitely try this out on cupcakes soon.
Because of the guilt free Vanilla Cream Cheese frosting, these Strawberry Rhubarb Overnight Oats are top-notch!
The rhubarb I used in this recipe is raw. Although rhubarb contains oxalic acid, you don’t need to be worried about any health risks when you eat these Strawberry Rhubarb Overnight Oats. The most of the acid is in the rhubarb leaves and the skin. So just peel the rhubarb until all the red is gone to get rid off of the most of the acid. If you want to remove all the acid, just cook it.

- 1/2 cup rhubarb
- 1/2 cup strawberries
- 1/2 cup oats
- 1/2 cup milk
- 1/4 cup cream cheese
- 2 tbsp maple syrup
- 1 vanilla bean
Peel rhubarb and cut into small slices and set aside. Chop strawberries into small chunks and set aside. In a small bowl stir rhubarb, strawberries, oats, and milk with a spoon until combined. Set aside.
In another bowl whisk cream cheese with maple syrup and vanilla* until combined. Add to oats and stir to combine. Transfer to an airtight jar and store in the fridge overnight. Enjoy the next day.
OPTIONAL: Sprinkle with more rhubarb, strawberries, or nuts if you like.
*First, cut off the straight end of the vanilla bean. Then place the tip of your sharp knife below the curled end and cut the vanilla bean through the middle of the bean lengthwise. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of your knife. Then just use the seeds.
